Cooking with Beer!

Headed out to grab ingredients for your holiday meals? Don’t forget the beer! We’ve put together a list of 6 recipes incorporating beer that will spice up your small holiday gatherings.


Ingredients:

  • 32 oz “Just A Porter”
  • 1 1/2 C kosher salt
  • 1 C dark brown sugar
  • 3 garlic cloves, minced
  • 1 TBS black peppercorns

Directions:

In a clean 5-gallon bucket, mix together 4 quarts water, salt, and sugar with a long-handle spoon until dissolved. Add garlic and peppercorns and stir again. Add 12-14 lb turkey to brine and keep it submerged for 8 hours while refrigerated (or keep cool in a garage with a bag of ice on it). When 8 hours are up, remove the turkey from brine, discard brine, and cook the turkey as you prefer.

Ingredients:

  • 12 oz “Barbie Juice Blonde Ale”
  • 2 lbs brussels sprouts
  • 6 oz bacon, chopped
  • 1 shallot, peeled and sliced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • pinch red pepper flakes

Directions:

Trim ends of brussels sprouts. Add chopped bacon to a skillet on medium heat and cook till crisp. Add shallot 2-3 minutes to soften then add brussels sprouts and cook for 5 minutes. Pour beer into the skillet then add salt, pepper, and pepper flakes. Bring to a simmer and lower heat until brussels sprouts are cooked through.

Ingredients:

  • 3 TBS “Smile Like You Mean It” Double IPA
  • 2 small onions, diced
  • 4 celery stalks, diced
  • 2/3 C butter
  • 1/2 tsp ground sage
  • black pepper, pinch
  • salt to taste
  • 12 C bread cubes, dried
  • 2 TBS fresh parsley, chopped
  • 1 TBS fresh herbs (thyme, sage)
  • 3 1/2 C chicken broth

Directions:

Preheat oven to 350 degrees. Melt butter in a large skillet over medium heat then add onion, celery, and ground sage. Cook until tender (not brown) for 10 minutes. Place bread crumbs in a bowl and add onion mix, parsley, and fresh herbs. Pour beer and broth over bread until moist and toss. Season with salt and pepper. Place in serving dish, dot with more butter, and cover for 35 minutes. Uncover and bake for additional 10 minutes.

Ingredients:

  • 2/3 C “Friends with Fancy Persuasions” NE IPA
  • 4 lbs potatoes, peeled and cut into same size cubes
  • 2 TBS butter
  • kosher salt + black pepper
  • 2 TBS all-purpose flour
  • 2/3 C milk
  • 1 C shredded white cheddar
  • 1/2 C shredded yellow cheddar
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 C sour cream
  • 2 TBS chopped chives + more for garnish

Directions:

Boil potatoes until totally soft drain and return to pot. In a medium saucepan over medium heat, melt butter then whisk in flour and cook 1 minute. Add beer and milk and stir constantly until thick. Remove from heat and stir in cheese until melted and all seasonings. Mash potatoes in the pot and then fold in cheese sauce, sour cream, and chives.

Ingredients:

  • 12 oz “Open Secret” Blackberry/Blueberry/Lemon Sour
  • 1/2 C sugar
  • 1 1/2 tsp orange rind, grated
  • 1 (12 oz) package fresh cranberries

Directions:

Boil beer in a medium pan over medium heat. Add sugar, rind, and cranberries and bring to a simmer. Cook 20 minutes or slightly thick, stirring occasionally. Remove from heat and cool to room temperature. Pour into a bowl, cover, and chill. The sauce will thicken in refrigerator.

Ingredients:

  • 1/4 C “Dash 9 Porter”
  • 4 large eggs
  • 1 1/2 C sugar
  • 1/2 C brown sugar
  • 1 stick butter, melted
  • 1 C cocoa, sifted
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1/2 C all-purpose flour

Directions:

Preheat oven to 350 degrees and lightly grease muffin pan or 9x9x2 baking dish with cooking spray or butter. In large bowl mix sugar and butter till soft. Add vanilla, eggs, and beer. Fold in flour and cocoa. Mix well but don’t overmix. Pour in crushed candy canes, mix again and pour into muffin pan or baking pan. Bake until toothpick comes out clean.
